Making pancakes seemed like a massive obstacle for me not too long ago. Are you craving pancakes this morning, but you're terrified of turning your kitchen into a mess with 10+ ingredients? Are you hungry now and you think this is going to take you an hour? Have no fear. Here's a very easy, no fail banana pancake recipe for you.

When people asked me what I enjoy making in the kitchen, I always said, "Oh, I don't cook. I don't bake." The idea seemed like an unnecessary mountain to climb. I'm not sure if you're in the same boat as me. But the more I tried it out and the more I repeated recipes, I gained confidence and my food started to turn out surprisingly tasty.
The more you push yourself, the smaller the obstacle becomes. The result is something you can be proud of and honestly, it's probably cheaper and healthier than eating out. For me, the key is to use healthy ingredients, minimally added sugar, and minimal ingredients.
What's worse than cooking with a ton of ingredients? The clean up afterwards! Who wants to cook for an hour and then clean up for another hour? When do you get to sit down and eat? After your food is cold? No thank you! That's how I figured out this recipe.
Why choose bananas to add into my recipe instead of keeping it as a traditional buttermilk pancake? At least every other week, I end up with overly ripe bananas. I guarantee that many of you have overly ripe bananas sitting on your counter right now or you did recently and just tossed them - unless you don't eat bananas regularly.
Despite having a sweet tooth, I love to change out traditional ingredients in popular recipes for healthier ones. In this case, instead of buttermilk or having empty calorie ingredients, I wanted to incorporate healthy ones like bananas. They have such as strong, sweet flavour so you can cut out a lot of sugar in your recipe and have a lovely gooey texture that fits perfectly with the pancake batter. And, of course, we can't leave out the nutritious value bananas have.
I'm going to make this very simple for us. Banana pancakes with six ingredients you probably already have in your pantry, unless you plan on adding the optional maple syrup drizzle on top. Then, it's seven ingredients to make your dish complete. My pancakes don't feel like pancakes without the maple syrup. So, it's a necessity on my list. Ready? Here we go!
Here's a list of simple ingredients you will need:
Now, let's get right to it!
Directions:
Step 1: Mash a medium-sized banana.
Step 2: Add one medium-sized egg and mix it with the banana.
Step 3: Add 1 tsp of vanilla extract.
Step 4: Add 1/4 cup of plain flour.
Step 5: Add 1/4 tsp of salt.
Step 6: Heat up a pan at medium heat. Add about 1 tablespoon of oil to the pan. Whisk all of the ingredients together. Then, add the batter to the hot pan.
Step 7: Flip pancakes once the batter is bubbling (about 2-3 minutes on each side).
Step 8: Plate your pancakes. Decorate with your favourite toppings. Then, drizzle the best maple syrup you can find. Dig in!
How did this cooking session go for you? And how did your new creation taste? If you felt it was not sweet enough, feel free to add your own touch of natural sweetener such as honey or coconut sugar to the batter to keep it on the healthier side. You can throw in some semi-sweet chocolate chips if you want it to be more of a dessert style pancake. Feel free to put your own spin on these banana pancakes. And don't forget to put on Jack Johnson's Banana Pancakes song in the background while you cook. It'll give you some positive, relaxing vibes. Let me know how your cooking experience goes. This recipe is all about making breakfast or brunch easy and tasty, leaving a minimal mess. I'd love to hear your take on this recipe! Leave your comments below
